However if you're not sure just how much you'll use your new grill maybe its best to buy a cheap grill from the store, just to see if you get enough use from it, before you go building a permanent BBQ fixture in your garden.

3) Space: How much space have you got to work with? If your garden is a reasonable size, well then a brick BBQ should sit nicely into it without taking over. But if you can barely swing a cat in your yard, maybe a smaller BBQ from the store is a better idea.

When all is said and done, a brick BBQ will suit the vast majority of yards, remember you can tailor the size and look of the whole thing to suit your space.

Instead of trying to stuff too many things into your sandwich why not just pick two things that you think go well together and use that? For me, I really enjoy eating blue cheese. So I like to juxtapose that with something sweet. For example blue cheese with apricot chutney. This makes it easy not to over fill my sandwich. It does not take long for this panini to become ready either. After a few minutes the cheese will have started to melt and the grill marks will begin to appear on the top of the toasted sandwich. At this stage I know that it is ready so just take it out of the machine and serve it up straight away.

Filet mignon is French, of course, with filet meaning "thick slice" and mignon meaning "dainty." Filet mignon comes from the small end of the tenderloin (called the short loin) which is found on the back rib cage of the animal. This area of the animal is not weight-bearing, thus the connective tissue is not toughened by exercise resulting in extremely tender meat. This also means that the meat lacks some of the flavor held by meat that has the bone attached. In order keep the flavor, you must cook filet mignon quickly. This can be done a variety of ways, including broiling and grilling.
It should never be cooked beyond medium rare, because the more done it is, the less tender and more dry it becomes and the more flavor it will lose. You should always use a dry method of cooking, even when it will be a quick method. Methods of cooking that are dry are such types as roasting, pan frying, grilling, broiling, etc. Since this cut of meat is more dry than others, you will not want to cut the meat to check to see if it is done. Instead, you should touch it. The touch-method of checking is not as hard as it may sound:

1. If the meat feels hard or firm, it is too done.

2. When the filet mignon is soft when you touch it and your finger leaves an imprint, it is rare.

3. If it is still soft, but leaves no imprint, and is slightly resilient, then it is medium rare (best for this particular type of meat).

The reason filet mignon is often wrapped in bacon (this wrapping is called barding) is because this particular cut of meat has no layer of fat around it. The bacon not only adds extra flavor to the filet mignon, it also gives it the fat necessary to keep the meat from drying out. This is a concern since the strips are so small in filet mignon and they have less fat than most cuts of beef.

What to serve with Filet Mignon

Since the flavor of filet mignon tends to be quite mild, many people prefer to serve it with sauces, either smothering the beef or as a dip. There are many different choices for the best sauce for filet mignon and most depend solely on the person's particular flavor preference. Some consumers prefer to have a certain type of steak sauce for dipping and some may prefer a marinade to add flavor during cooking. Either of these can turn out well.

Wines & Filet Mignon

There are many different types of wines that are good to serve with filet mignon, and determining which one will go best with it depends largely on the flavor of the sauce. This is especially true if the sauce is rather strong, or has a flavor that is stronger than the filet mignon itself. The best wines to match with filet mignon are dry, red wines such as Merlot. If your preference is a sweet wine, you may want to consider trying a White Zinfandel (if this is your choice, though, you will not want to use very much pepper on the filet mignon). If you are a white wine drinker, the best match for filet mignon will be a rich Chardonnay.

Tips for cooking Filet Mignon

-When selecting tenderloin or slices, choose the lighter color over dark red. This indicates more marbling which makes it more tender. This cut is so tender that it should never be cooked beyond a medium-rare stage. The longer you cook it, the less tender and more dry it becomes.

-Use a dry, high heat method such as broiling, roasting, pan-frying or grilling for this tender cut.

-Whole tenderloin is wonderful to stuff or bake en croute (in savory pastry).

-Cutting into the meat to check doneness lets precious juice escape. Use the touch method. Press the meat. If it feels soft and mushy and leaves an imprint, it is rare. -If it is soft, but slightly resilient, it is medium-rare. The minute it begins to feel firm, it is overdone.

-Since the tenderloin has no surrounding fat tissue, it is often wrapped in a layer of fat (called barding) such as suet or bacon to keep it from drying out. Likewise with filet slices. The barding also adds flavor.

-Cubed tenderloin is a popular choice for fondue hot-pots and shish-kebabs.

-To ensure even cooking when roasting the whole tenderloin, the small end should be tucked up and tied or trimmed for other use.

There are so many different types of cookware on the market today, it can be hard to decide which to type to buy. When I decided to replace my worn out pots and pans, I decided to do a little research before making a purchase. I was amazed at the differences in types of cookware. I found that some types of cookware are more healthier cooking choices than others. Here is a list of each type of cookware's pros and cons. This should help you make up your mind when it comes time for you to update your own cookware.

Stainless Steel- Stainless steel is one of the best choices for cookware, as long as it is properly cared for. Stainless steel is nearly non-stick and heats evenly, especially if it has an aluminum clad bottom. Never use scouring pads or metal utensils with stainless steel. Scratching the inside of the cookware can allow small amounts of chromium and nickle to leach into your food. Be sure to follow cleaning instructions from the manufacturer when caring for stainless steel cookware.

Copper Clad Exterior with Stainless Steel Lining- To retain the shining copper exterior on copper clad requires more care than just stainless steel. It also allows the benefit of copper's ability to conduct heat. The stainless steel interior should be cared for by avoiding scratches of any kind. Once again, follow manufacturer's instructions when cleaning your cookware.

Aluminum- Regular aluminum cookware has been on the market for ages. It heats quickly, is lightweight and costs less than many other types of cookware. Aluminum can be reactive to acidic foods. Try to cook your tomatoes and other acidic foods in a different type of cookware. Don't use aluminum cookware over high heat. It has also been suggested that aluminum cookware can be linked to Alzheimer's disease, but this has not been proven.

Anodized Aluminum- Anodized aluminum is safer to use than regular aluminum cookware. It has been treated in a special process to prevent any leaching of metals into your food. It is also lightweight and heats evenly and quickly. It does not react when cooking acidic foods either.

Copper Cookware- Copper cookware is very pretty, but if not cared for properly it can also leach into your food. It is usually coated with a protective layer to prevent this from happening. I would avoid using this type of cookware if it is uncoated or the coating is scratched or dissolved. For best results, follow the instructions given by the manufacturer.

SilverStone and Teflon- SilverStone and Teflon are both non-stick cookware finishes. They make cooking and cleanup a breeze, but they can also emit harmful fumes when used over high heat. When scratched, small amount of the coating can also get into your food. Don't use Teflon if you have a pet bird. The fumes from cooking with Teflon is hazardous to birds.

Cast Iron Cookware- Cast iron cookware is one of the best choices for cooking. It conducts heat evenly and has no hot spots. When properly cared for, it is a nearly non-stick cookware. Since we need iron in our diets, the small amount of iron that leaches into food is actually a benefit. Cast iron must be seasoned to keep it from rusting. Follow the instructions that come with your cookware to ensure a properly seasoned finish. Due to the thickness, it heats up more slowly than other types of cookware. It is also extremely heavy, which can be a draw back for people with hand or wrist problems.

After much debate, I finally decided to buy a quality set of stainless steel cookware. I'm caring for the finish as recommended, and I'm making sure to only use wood or plastic utensils when cooking. This set of cookware should last for many years to come.

I already have a 13" cast iron skillet and absolutely love it. The only reason I chose stainless steel over cast iron was because it's hard to find cast iron saucepans in the most common sizes. I may yet add a smaller size cast iron skillet or griddle to my cookware collection before I'm completely satisfied.
